Beef Jerky time

Did my first batch of pepper and teriyaki jerky. One rack each. Smoked with Hickory.

Oh yeah

Basic Black Pepper Jerky Marinade for 5lbs meat
8 oz Soy Sauce
2 oz Worcestershire sauce
2 Tbl Fresh coarse-ground black pepper
1 tsp Cayenne (optional)
1 tsp (levell) Cure#1

Teriyaki Jerky Marinade for 5lbs meat
10 oz Soy sauce
4 oz Worcestershire sauce
2 Tbl chopped garlic
2 tsp fresh black pepper
8 oz Dark Brown sugar
2 tsp fresh chopped Ginger
3 finely-chopped Scallions (white & green parts)
2 tsp -1 Tbl Sesame oil (potent, so use to taste)
1 tsp (level) Cure#1
I mixed in the meat in two bowls with the ingredients, and bagged them in zip-loc freezer bags. Squeezed out the excess air and put in the fridge over night. Next day remove meat, pat dry and rack it in the smoker. Smoked at 160* for 5+ hours burning a blend of Hickory and Apple for the 2nd and 3rd hour.
 
Dang it was good thanks Craig. I went with a kalbi marinate and we ate about half already. Where did you get your hanging system?

Dan,
Those racks came from a metal file cabinet. The S hooks are pieces of Stainless Steel bicycle spokes cut and shaped.
