Canadian bacon time

Doing it tomorrow three ways to see which way I like it better. Peppery rub, sweet spice similar to what would go in a pie apple that is and an agave spice

Bacon pretty much can be made with any type of pork cut. I prefer using the shoulder for cottage bacon and pork loin for the Canadian bacon. For the cottage bacon I just cut the shoulder into 2" thick sections which for me have more of a traditional look and Craig if I get you this year, I will send you some. Promise
