Rib day

Wife wanted ribs today and was pissed she missed out on the meatloaf on saturday.She was in Biloxi,Mississippi on another gambling junket. She requested these today.Of course it's 38 degrees here right now.

Just a stock McCormick rub this am

And now in the smoker for at least 4 and a half hours using Pecan wood chips

Looks good, I did two racks of baby backs this weekend. They had a chili powder based rub, with a honey based finishing glaze. Really enjoyed them, you should check out a book called serious BBQ by Adam Perry Lang, good book.

I ordered some Beef back ribs cut from a rib roast with all the meat left on. Otherwise known as slab cut. They should be awesome. I am trying to get the wife to let me buy a smoker in time to do them right!!!!!

This will be our Thanksgiving day feast.

Make sure you post some pictures, I'd like to find some good beef ribs.
