Amish breakfast casserole

Last week I tried a recipe I got from another foodie buddie that I'd been wanting to test. I made it for the Thanksgiving feast we had at my office. I was the first to sample it and the rest was gone in minutes. I would recommend it and will make it again when we have company for the holidays.

Ingredients
1 lb sliced bacon, diced
1 med. sweet onion, chopped
6 eggs, lightly beaten
4 cups frozen shedded has brown potatoes, thawed
2 cups (8 oz) shredded cheddar cheese
1 1/2 cups (12 oz) 4% cottage cheese
1 1/4 cups shredded swiss cheese

Directions
In a large skillet, cook bacon and onion until bacon is crisp; drain. In a large bowl, combine the remaining ingredents; stir in bacon mixture. Transfer to a greased 13"x9" baking dish.
Bake, uncovered, at 350* for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand 10 mniutes before cutting. Yields 12 servings.

Note: I did not grease the glass baking dish and the casserole came out fine after cutting it into servings.
