Alright so here's a recipe I tried today. Begin by splitting boneless skinless chicken breasts lengthwise and then pound them to a quarter inch thick. now roll in ham and Swiss cheese and hold together with a toothpick.

in a separate bowl mix corn flakes to a course style bread crumb. add a tablespoon of parsley and a half of tablespoon of paprika.

Drench the chicken rolls in buttermilk and coat with the bread crumbs.

place in preheated oven of 425 degrees for 35 minutes.

Maybe I'll try this this weekend. The wife is going on a casino junket from sunday till tuesday and I'll need to come up with a dinner for monday. Maybe try it with Frosted flakes instead of corn flakes.

Do you choke the chicken pieces before pounding them?
 
Maybe the sweetness of the frosted flakes will lessen the salty flavor so he can swallow it easier.

You could try panko bread crumbs, start it in a skillet then place it in the oven to finish it.
