Crab spaghetti

Dungeness Crab (caught by the Mrs.) and thin spaghetti leftovers. Poor Johnny will be working overtime in an hour or two.

Thin Spaghetti with Crabmeat
3 tbls extra virgin olive oil
3 small white onions, finely chopped
3 inner celery ribs, thinly sliced
2 large cloves garlic, minced
1/4 cup finely chopped flat parsley
Freshly ground black pepper
2 tsp paprika
1 to 1-1/2 cups fish broth or bottled clam juice
1# fresh or canned lump crabmeat flaked (not cheap so you might need to either sell or rent out your spouse to help finance it)
1# thin spaghetti


In a saucepan, heat the oil and saute onions, celery and garlic until the onions begin to turn color, about 3-5 minutes.
Add parsley, pepper, paprika and 1 cup of fish broth and simmer 10 minutes. Stir in crabmeat and simmer 3 minutes. Adjust seasoning by adding more freshly ground pepper as necessary.
Cook the spaghetti according to package directions. Drain and toss with half the sauce. If the pasta seems dry, add the remaining fish broth. Spoon the remaining sauce on top. Serve at once.
