Never made this before and only had it once as a teenager (eggplant parmesan, outta my moms range at the time). This turned out really tasty but a little labor intensive. The musty-like smell of the eggplant is a little bit of a turn off but the taste made up for it. I cant wait for lunchtime tomorrow. Yummy
