Electric fan sensor mounting

Eventually when my car goes back together the plan is for an electric fan. I've got the sensor for the water temp gauge on top of the manifold, but some of the fan temp sensors I see take the same kind of connection. where does everyone mount those? there are 2 water jacket plugs on the block, wondering if one of these will work, or if I should look for the type of sensor that is just a probe that's inserted into the radiator fins instead? My assumption is that I can't run the wires for both controllers to the same temp sensor on the intake, but no clue if that assumption is correct or not.

sorry if this is rookie question, I've just never run an electric fan on anything before. no way do I want the clutter of running a T fitting on top of my intake to be able to plug in 2 sensors to that port.
 
I used a water neck with an integrated port... The sensor is vertical, so I used and extra 90 degree spark plug boot to cover the terminal and wire...

Yes, I too use the thermostat housing for the temp sensor for the fan controller. You should have no problem finding one with a threaded insert at the top at most parts stores. The dash gauge sensor is plugged into the top of the intake in it's stock location.
