Headed to the store to pick up some grub for the fire station tonight

Szechuan chicken

1 head of garlic minced
2 lbs. of chicken cut into size pieces
5 tablespoons of soy sauce
2 tablespoons of white vinegar
3 tablespoon of sugar
1/4 teaspoon of cayenne pepper
1/4 cup of water
1 bunch of green onions
corn starch to coat the chicken
rice - it won't matter what you like white or brown, since you probably won't remember the rice after anyway just how great the chicken was

Prep
Slice the chicken in whatever size pieces you want
roll the chicken or place in a zip-lock bag with the corn starch shake well for thoroughly
fry until golden brown/crispy
mix soy, water, sugar, vinegar and cayenne - you might need to add more cayenne for your heat level
add garlic to the mix then add to the pan with the chicken and bring to simmer until sauce thickens
add green onions and cook for 1 more minute
serve over rice
Pour mixture over chicken

Pics to follow once I get back from the store and my plate when I'm done ;)

Time to eat

I'm back down in San Carlos, Mexico, so it probably will be freshly speared lobster. :)

Always try and test the heat of the sauce before applying it over the chicken. I usually add more cayenne, soy or sugar for whatever reason. It is easy to make and oh so good. Enjoy!

I'm here rootin around the kitchen and came across this recipe. DAMN does that look good. Ima hafta try me some a dat!!

I'll be working some and eating leftovers later on but this would get my vote.
