Green Chile Verde

5-6 lbs of pork shoulder season it with Montreal steak and slow cook for 4-5 hours at 325 - then shred the meat

While this is cooking, you need:
12 Anaheim peppers
2 jalopenos
3 onions
6 carrots
4 tomatoes
6 lbs of tomatillos
4 garlic cloves
1 bunch of cilantro
4 limes
5 lbs of pork picnic cut

Dice the carrots, garlic and onions saute in a pot remove from heat - add to the pot

Dice the picnic cut pork, add montreal steak seasoning to it and caramelize the pork once done place in a pot.

Roast in a half sheet pan of tomatoes and jalopenos and olive oil 450 for 15 minutes or so

The tomatillos need to be blanched then blended with the tomatoes and jalopenos into a sauce. Add to the pot after

Rough chop the cilantro and add to the pot

Squeeze of 4 limes and season with cumin to taste and your finished

Fire house style would be with mac and cheese and the chile verde goes on top.
 
Forgot to add 3 poblanos roasted
