Group buy of bison?

Is there any interest in a group buy of bulk bison meat?

It would be a combination of cuts in either 1/4, 1/2 or a whole animal.

I would be willing to make the trip to Oak City, UT and dispatch the beasts, transport it to the butcher and get it processed. Then I would pick up the meat and deliver it to the shipper, probably UPS.

You would pay the cost of the portion of the beast, the cost for your portion of butchering and shipping and packaging.

I think the price per pound would be in the neighborhood of $5-6 per pound plus shipping.

Please let me know soon so I can contact the grower and get a firm price and see if we can get the number of beasts we need.

Also anyone interested in the robes or heads can let me know and I can arrange taxidermy too.

Yep the robe is the hide. I have to say that summer hides are not as nice as winter ones.

First question.

Grass fed? If not, then I'm not interested.

I'd be interested in some ground bison and ribs.
 
He feeds hay and grains them for 3 months. I've tasted bison from five growers and this Guy's animals are the best tasting. Very healthy. Been to his farm and the animals seem every bit as happy as the ones I've seen in Yellowstone.

Ooooooooh a bison skull would be cool, but I only collect the free kind because paying for anything cuts into the Mustang fund. And we can't have that!
 
Just throwing caution to the wind, but I really hope all precautions are taken when it comes to handling, packaging and shipping of this meat. I assume it is shipped raw? frozen? on ice? Overnight shipments?

Just be careful.

Hell, just rub a little salt on it and toss it in the back of the covered wagon. Worked for the settlers, didn't it.

I'd be willing to buy a hunk of one, Mel.
 
The processor is very good. The animals are dispatched, field dressed and taken to the processor. The processor skins them and tags them and gets them in the walk in for hanging. When done with the butchering the meat is wrapped in plastic and then butcher paper and frozen.

When I ship the meat to my kids in ND and CA I use UPS because the owner hunts and ships meat to his kids. The last time I used a thick box and dry ice.

I used 2 day shipping and it got there and was still frozen.

There are lots of ways to get it shipped and next day is doable. We just have to look at pricing.

This weekend I will start to compile a list and PM those interested and gather the details so I can get some final pricing.

I would be interested in a few pounds. Freezer space and cash are limited resources around here, is there a minimum amount required?
 
If I read this right then we have interest for roughly two beasts. This would be about 700 pounds of wrapped meat.

I don't think a minimum would be required, I would have to say that a mix of cuts though would be needed. Since our butcher makes packages of stew meat instead of grinding everything. So, we don't get hit with a crap load of burger.

I own a grinder, I can do it myself if I need to. Plus it is nice to mix 1/4 pound of ground pork of cheap beef with a pound of bison. Most of the time I add a tablespoon of olive oil to the ground meat so it doesn't stick when I make taco meat and an egg per pound when making burgers.

It is super lean.

Um, this week end I will (after taxes are done) get a list together and PM you all so we can get an amount and then I can contact the grower and get some prices.

I'm in Mel. I have my own grinder also (attachment for my Kitchenaid mixer).

How would it be shipped? Flash frozen and overnighted?
