I like making homemade Pizza. i had some dough sitting in the fridge from some bread I made so last night became Pizza night!
I keep it simple. I use chopped tomatoes (no sauce) and drain the liquid well so it doesn't give you sloppy crust. Try not to pound down the dough too much or it won't rise well in the oven. For cheese I like fresh mozz, but again drain as much liquid as you can first. I top it with some chopped fresh basil and a quick drizzle of olive oil. Bake at the highest temp you can and ta-da! Great pizza just like they make in Naples.
