Buy a stack of corn tortillas. We like Mi Casa white corn because it fries really nice. We've tried other brands and some tend to bubble up or otherwise fall apart or not taste as good fried.
Pre-heat fryer to 350-400*
Cut a stack of about 10-15 tortillas (depending on fryer size) into chip shapes using a pizza cutter or knife.
You will see a lot of bubbles when they first go in.
As with all fried food, you know its about done when the bubbles go away. Once the bubble go away, the chips are done, at this point any more time is just making the color darker.
Drain over paper towels and salt to taste.
We like Velveta cheese with Rotell and sausage, fresh salsa from Sam's Club, or placing the chips on a cookie sheet and covering it with taco meat, beans, shredded cheese, etc, and baking it to the cheese melts and then adding the normal sour cream, lettuce and tomatoes.
These chips are better than your favorite Mexican restaurant. My 4 year old won't eat Tostitos anymore. They are the hit of any party we have. They taste great plain or with any of the fixin's listed above.
Store in a gallon size zip lock bag, and they stay fresh longer than store bought chips.
