It's 6:15am,Do you know where your Butt is?

My butt is in the kitchen, preparing to smoke yes, more Salmon.

How's the smoker working? Is that temp gauge above the butt for chamber temp?

Love it so far. I will seal the door better though.

Yeah,that's an old oven temp gauge that I used in the old on. I know I was running below 200 as I had the door open and was getting ready to dump some coals in with the mesquite chips mixed in. It is holding temp nicely. Had I know this was that good,I would have gotten it over the offset.
 
Just hit 163 so I pulled it off to wrap it in foil.I also dumped apple juice in the foil before I put it back in

Wrapped up and back in until it hits 190 to 195

And we're done.Took it out when it hit 195 and it almost fell apart while getting it into the pan.(Of course I had to have a few pieces that fell into the pan)

When I got it into the house I pulled the bone out and it just slid right out.It's now resting covered on the top of the stove waiting to be eaten.Some BBQ sauce a slice of cheddar and I'll be good to go.

The reviews are coming in,Last night I dropped some off at my Step-Mother-In-Laws house. There was a message on the answering machine when I got home wanting to know if I was going to do this again. The 2 neighbors across the street I gave some to stopped me this morning and just raved about it.My wife away again this weekend just wanted me to save her some(Which I did). I'll be picking up a brisket this week to throw in.Wasn't bad,A 10 hour smoke and I only used about a bag and less than a 1/4 of charcoal.I only used the wood chunks in the first 2 trays of charcoal and then just straight charcoal after that.
