My cousin is out in SoCal from the Leeds (UK) area and we had them over for a bbq yesterday afternoon with his mother (my Mom's sister) and my family.

Cooked up about 13 lbs of Costco Choice tri-tip, roasted bell peppers and corn on the cob. Served this with potato salad and tortilla chips and a wicked salsa my brother-in-law makes.

Topped it off with a cream cheese flag cake my son made (served with a blueberry syrup, backberries and strawberries).

Set up my Primo grill at 270 deg F and used 3 meat thermometers (4 pieces of meat - transferred the one in the smallest piece into the largest once it was done). Set cook temp (internal) for 160 deg and the meat was so darn tender, you could cut it with a fork.

Only seasoning I used is a product called Butt Rub.

Pic below.
