Late Model 16's - Tire Sizes

I have a set of late model (2005-2009 V6) 16" wheels that are going to go under my car. I already know I need to get the adapters to push them out a little in the front (RUnning a wider than stock axle in the rear, and have confirmed I won't need any sort of spacing back there) but I'm not sure what Tire sizes I can run. I have checked Dodgestang's list, but didn't see anyone running this specific wheel.

I know I've heard the stock tires will rub, but I'm not sure how much smaller to get them.

Will 225-50-16s work?

I am not opposed to rolling my fenders.

I'm running 16's on the front of mine but the wheel offset is probably different than yours. Also mine is a 67 with Granada disc brakes and lowered.
