New smoker

Uncovered my smoker last week only to find the firebox was rotted out. Got a piece of steel and gave it a quick fix. Called charbroil about it and got the "it's out of warranty and due to the fact that there's heat involved,there was nothing they would do about it.But they'll sell me another firebox for $59 plus shipping". Wife said not to play around with it and get a new one. So I picked this one out and just ordered it. Sort of on the order of Craig's and after it comes in might have a few question for him....

Looks good. Am I correct that one of the bottom drawers is for charcoal access and the other drawer for? waterpan?

What do you normally smoke? I ask because if that smoker only provides 4 racks you can't smoke too much of thin meat such as fish, etc. But if you smoke big chunks then it will probably be fine. My masterbuilt came also with 4 racks but I ordered two more since there were already holes available in the smoker.

Depending on how well you smoker is sealed, you might want to consider applying a permatex sealer around all 3 door openings to help keep the smoke from coming through.
Meanwhile, grab a beer and sit on your door step to wait for it's arrival.

Yes it the 2 drawer,one for charcoal and one for water.
It comes with 5 racks and a meat hook.
I saw the permatex on yours and was going to ask you about it.

I do alot of briskets and pork with the one that rotted out. Beer can chicken also,but I would think I would have to take a rack or 2 out to get it in there with the fixture I have for it. I also plan on smoking some fresh kelbasa in there now that I'll be able to hang the big links in it.

One of the first things I did with the old one was smoke a prime rib. That came out excellent. I will do another with the new one.

After just reading a couple reviews, it just answered my concern/question on the door's magnet closures. Sounds like you might need to consider adding a stouter clamp style locking mechanism.

I was thinking that myself. Even going as far as thinking about those earth magnets that Radio Shack sells or coming up with a latch idea. It's fun to re-engineer stuff thats probably been re-engineered a million times over....

Before I forget,What kind of permatex did you use?
 
Though your new smoker is charcoal, you do burn wood chips? If so, where do you access the wood chip box?
 
It's got a frame that the chip box sets into in the lower drawer. This should be interesting as I stopped using the chip and used chunks in the offset because the chips wouldn't last and you really didn't get too much smoke flavor in that with the chips.
 
So access to both the chip box and charcoal is via the lower drawer and water pan via upper drawer. Even I can understand that. :thu


BTW regarding the Permatex seal, it was either the High Temp RTV Silicone gasket maker or the Ultra Copper high temp RTV silicone gasket maker. Think it was the latter just due to it's coloring but will confirm tonight. I decided on the one that seemed a little softer.
 
New smoker

Here's a pic of the latch that Masterbuilt uses which are adjustable. Dont know if they are readily available seperately.

Just got the email that it shipped. Depending on where Home Depot shipped it from(I opted to pick up in store thinking it might get here quicker) so I probably won't get a tracking #.
 
uhhhhh.....where is it? How many briskets have you smoked in it so far? Where's my food sample?

I called home depot yesterday and they said I should be getting an email today that it was on the truck. It's the only thing I didn't like about ordering it off Home Depot,up to 3 days to process the order and then 4 to 7 days to ship.Ordered it may 8th,shipped may 9th.I finally posted in Roll Call over at Smoking Meats and was reading over there about doing a first burn in for a couple of hours. I'm going to head out to this store around here that specializes in food oils and pick up a nice one to season it with. My wifes asking too,wants another prime rib and Mac and Cheese off it.
 
Looking to hear how it works for you. I love the meat smoking forum. I tapatalk it as well.
