So I have a couple of projects going on and I was wondering if I should go ahead and rewire them just to be safe from possible fires early in the future? And also if EZ Wiring Harness's would be good to use if I did decide to.

There was a cover that unscrewed, you would cut the coil wire to get a bare flat end, slip it through the cover and push it down on a needle type post to make contact then screw the cover back down which would keep tension on the wire so it wouldn't slip out. I think the cover had and O ring.
Look for a phillips head screw on the top or better yet post us a pic instead of making us guess...
