Being Cinco De Mayo yesterday and yet we had tons of fresh Salmon, decided why not some fish Taco.....

I too celebrated Cinco De Mayo last night with a fish taco ( but it didn't look anything like that one.) :wth

looks good. When I make fish tacos I like to make a spicy citrus cabbage for the topping. A little OJ, some lime juice some red pepper mixed with dry cabbage (just use a cole slaw mix), Sometimes I will put some cilantro and black beans in it as well.
Really adds a nice touch to some white fish. :yah
