3 point seat belts.

Be careful with 3 point seat belts in a convertible. You have to have the upper mounting point for the shoulder belt such that it doesn't force your shoulder down in an accident. Some later model seats have a pass-through for the shoulder belt above your shoulder level.
 
That set-up doesn't seem safe. Like Randy warned, if you were involved in an accident that low "upper" mounting point is likely to cause someone severe injury. Look at any modern car and you will see the top mount is ALWAYS above the shoulder height.
 
You either have to install a rollbar (which brings it's own safety issues for rear seat passengers) or use a modern seat which is designed to not only raise the upper angle of the shoulder belt but also support the it in the case of an accident and not allow it to pull down on the occupant. Using your stock seats I don't see how it its possible...safely. In your situation I think I would simply make sure I had quality lap belts and leave it at that.

I've ridden in a few trucks with the seatbelts integrated into them, google 2005 Silverado seat, you'll see what I mean.
But in their stock form, there is no way that they would pass as any OE option for a vintage mustang convertible.
 
Well the seats don't have to look vintage or oe. I just don't want them to look really out of place. I actually want to put in newer mustang seats. But I want to keep with the white interior.

I think newer mustang seats might look strange in a convertible as they may sit up too high and look out of place. Have to search some images and see if i can find anyone who has put them in a car of your vintage.
 
The seats on the 69/70 do sit up high anyway, but not sure how how the newer ones are.
