8.6 pounds. Cooked at 500 degrees for 90 minutes. Turned oven off and left it in not opening door until internal temp reached 135. It was at 90 when the oven wad shut off.

Rubbed it with grey poupon, fresh ground pepper, thyme, onion powder, garlic powder and kosher salt.

Can't wait to start violating it.

Third year makin' Beef Wellington (its getting easier). Also had steamed fresh string beans and baked red potatoes. Homemade punkin pie and cool whip for dessert.
