Stuffed meat loaf in the smoker

Saw this on BBQ web and decided to give it a go.
Meatloaf stuffed with sliced Deli London Broil
Chopped up an onion and a pepper in my ninja.

Mixed it in with the ground beef and started stuffing it with the deli london broil

Topped with a few strips of slab bacon and into the smoker with some cherry wood.

Has been in since 11am and is climbing slowly.Just went out and dumped the grease out of the pan.Right now at 138degs.
 
Shame your not closer Craig. This came out awesome. I've had 3 sandwiches already.I thought the deli beef might have toughened up,but it was as tender as the soft ground beef was.The only thing I did was got rid of the bacon after I took it out of the smoker. That was overly tough.

Looks delicious, one day when I am in a giving mood I will share my recipe for stuffed lentils. :yah
