Going to be buying some new shoes for the '07 GT soon and want wider and lower tires than the OE 235/55 R 17's. Will 255/45 R 17's or wider work on the factory rims or is there a better combo to use ???

Wider tires on stock 17" rims

255/70-17 will fit on your 17x8's and won't affect your speedometer by enough to matter. It's about the only truly easy 17" tire size upgrade, as most everything else either messes with the speedometer or needs to be mounted on wider rims.
You may find that cornering turn-in response is a little "softer" than with your 235/55's, but the grip will still be there.
