Last night's dinner, Salmon Lox....

That would go good with roasted marinated artichoke hearts. Mmmmm!
 
Since fresh caught salmon is out of the question here in Utah, I would have to use store bought farm raised salmon. That aside I would love to make my own LOX since it is one of my very favorite foods with some cream cheese and water bagels!

So, that being said, Craig we need a recipe! Yours looks so yummy! How did you make it?

7-8 hours dry brine* (+dry dill). Rinse well
7-9 hours wet brine** (extra maple)
Refreshen for 20-30+ minutes
5-6+ hours dry in fridge
2 ½ hours room dry w/fan
3 hours cold smoke (apple/alder) (2/1 ratio)


*Dry brine
Salmon pcs - slit skin
5 parts Salt (coarse or Kosher)
6 parts Br. Sugar


** Wet brine (for small quantities)
9 1/3 cup water
1 cup Kosher salt
1 cup brown sugar
1/2 cup maple syrup
1 Tbls whole black peppercorns
2-3 cloves garlic
dry dill
 
Does it come out sweet?

I can't wait to try it. I hope my taste buds aren't messed up from eating all that store bought stuff.

I would not call it sweet. There are so many different recipes on the net to choose from.
