Citrus cured Salmon. Two pieces encrusted in salt, sugar and lemon zest.

wrapped in parchment paper then tin foil. Placed on a flat surface in the fridge with a heavy brick or rock on top. Sat chilling for two days.

Cure needs to be rinsed off.

Yup, suddenly all my pics which I've submitted via tapatalk are no longer viewable. Hmmmmmmmmmm. I finally had to download pics the old fashion way.
