Spatchcock Chicken

Picked up a chicken and spatchcocked it. Rubbed in Rudy's Rub.

I used the remaining coffee wood chucks in with the lump charcoal.

We had this with roasted corn on the cob (in the husk) and roasted bell peppers (red, yellow and purple). Yum!
