It appears that none of the Mustang parts vendors sell the aluminum mylar overlay for a '67 console with manual transmission. Does anyone know a source where I can buy the material and just cut it myself? I've searched the web and have come up empty-handed. Appears that I would need a roll about 10-12" wide and about 36-48" long.

Where to buy aluminum mylar overlay stock?

Can you use a roll of aluminum flashing material. Sometimes called valley flashing. Its available at any of the big box home centers. Its easy to trace and cut what ever you need and relatively inexpensive. I think rolls are available up to 14 or 16 inchs wide and up to 25 feet in length. A 10 foot roll is around 10 bucks. You would just need some strong adhesive (epoxy) to bond the materials (maybe gorrilla glue?).

An engraving shop I worked at for a bit used to have sheet aluminum in clear, colors, and wood grain. It was not real flexible but could be formed to gentle curves. Easy to cut with a dremel or even have them cut it to the sizes you need.
